Soup Dumplings- light & fluffy

These are the fluffiest gluten free dumplings. My husband is picky when it comes to gluten free food. If it doesn’t “taste like the real thing”, he is not a fan. He approves of these! We devoured them before realizing we didn’t take a photo of the inside.  

Trust me- perfection! 

I made these over a chicken soup. Any soup with an even amount of broth and vegetables/meat will work just fine. The key is to drop the spoonfuls on solids to steam on the stew, not in liquid to boil. 



Dumplings:
  • 1 cup gluten free all purpose flour
  • 1 tsp gluten free baking powder
  • 1/3 cup milk*
  • 2 tbsp melted butter**
  • 1 egg
* Water can be substituted for milk to make this dairy free. There isn’t much of a noticeable flavor change. 

**dairy free butter can be substituted for butter. Our favorite is Earth Balance.

Instructions:

  1. In a small bowl, mix the dry ingredients together, then add 1/3 cup milk, melted better, and egg. Stir until combined. It’ll look too wet but that’s what you want.
  2. Drop by rounded tablespoons into your boiling soup mixture. Cover, reduce heat, and let simmer for 15 minutes. Do not peek until 15 minutes are up! 
  3. Enjoy!
