Soup Dumplings- light & fluffy
These are the fluffiest gluten free dumplings. My husband is picky when it comes to gluten free food. If it doesn’t “taste like the real thing”, he is not a fan. He approves of these! We devoured them before realizing we didn’t take a photo of the inside.
Trust me- perfection!
I made these over a chicken soup. Any soup with an even amount of broth and vegetables/meat will work just fine. The key is to drop the spoonfuls on solids to steam on the stew, not in liquid to boil.
Dumplings:
- 1 cup gluten free all purpose flour
- 1 tsp gluten free baking powder
- 1/3 cup milk*
- 2 tbsp melted butter**
- 1 egg
* Water can be substituted for milk to make this dairy free. There isn’t much of a noticeable flavor change.
**dairy free butter can be substituted for butter. Our favorite is Earth Balance.
Instructions:
- In a small bowl, mix the dry ingredients together, then add 1/3 cup milk, melted better, and egg. Stir until combined. It’ll look too wet but that’s what you want.
- Drop by rounded tablespoons into your boiling soup mixture. Cover, reduce heat, and let simmer for 15 minutes. Do not peek until 15 minutes are up!
