Collard Greens with Crispy Bacon
We subscribe to a weekly produce box delivery. It's fun to receive produce we don't pick out. It's taught me to get out of my comfort zone. I've learned to cook with fruits and vegetables I wouldn't normally pick out at the grocery store. Collard greens were in the box this week. As my husband unpacked it, he announced that he's "never liked collard greens"....
Game on!!!
Mid dinner, he texted his mom..
"I like collard greens!!!"

Ingredients:
- 12 oz collard greens- cut into 1 inch strips
- 2 slices of bacon
- 1/2 large diced onion
- 3 garlic cloves
- 2 cups homemade chicken broth
- 1/2 teaspoon red pepper flakes
- 2 tsp red hot sauce
- salt & pepper to taste
- 1 tbs olive oil
Directions:
- Cook bacon until crispy. Remove from pan and crumble. Add onion to bacon fat reserve, and cook until tender, about 5 minutes. Add garlic, and cook until fragrant. Add collard greens and olive oil fry until they start to wilt.
- Pour in chicken broth, season with salt, pepper, and red pepper flakes. Reduce heat to low, cover, and simmer for 20 minutes, or until greens are tender. Toss with hot sauce and bacon crumbles.
- Serve!
