Quinoa Artichoke Bean Salad


Ingredients:

2 1/2 cups cooked Quinoa

1/2 cup diced green bell peppers
15 oz. drained & rinsed black beans
15 oz. drained & rinsed garbanzo beans
14 oz. drained quartered artichoke hearts
1/2 cup Newmans Own dressing-Olive Oil and Vinegar 
       *1/4 cup apple cider vinegar and 1/4 cup olive oil is a good substitute* 
1/4 cup finely chopped parsley 
1/4 cup green onions
1 tbs. cumin
Salt & Pepper to taste

Combine all ingredients.  


Refrigerate until ready to enjoy! 







Serve with a sprinkle of parsley and/or crumbled feta.
