Nicole's Turkey Panini

Once or twice a year, one of our best friends, Dave comes to visit. I spend the weekend cooking and baking, while the guys talk about manly stuff, argue about electronics and technology. We laugh, reminisce about college,  and have a memorable time! Every time Dave visits, he requests that I make Turkey Paninis.

Ingredients:

Whole wheat bread slices (I like to round out our diet with fiber rich bread)
Butter


Cole Slaw
4 cups Pre Shredded Cabbage and Carrot Cole Slaw Mix
1/2 tablespoon Finely diced JalapeƱos
2 tablespoon Lemon Juice
2 teaspoons Mustard powder
1/2 cup Miracle Whip
1/4 cup Apple cider vinegar
1 tablespoon Sugar
1/4 teaspoon or to taste Salt
1/2 teaspoon or to taste Pepper

Turkey Deli Slices
       -We prefer Boar Head Jerk Turkey breast. It's spicy, dairy free, and yummy!!! 
Baby Swiss Cheese
       -Baby swiss (we don't have a preference) melts better than regular swiss. But if you like the  bold                             swiss taste, using with the regular swiss will still be just as deelish... if not better. :-)

Thousand Island Dressing
       -I'm pretty flexible with Thousand Island and use whatever is in the fridge.



Combine all coleslaw ingredients, mix well.  Refrigerate until ready to use. 


Heat Panini Press. Don't have a panini press? Use griddle over Medium High heat on the stove- Think grilled cheese.

While Press is preheating, lightly butter bread and assemble sandwich in this order: turkey Breast,  baby swiss, thousand island dressing. 

Cook Sandwiches for 3-5 minutes until bread is crispy and cheese has melted. 

Open grilled sandwiches, spoon desired amount of coleslaw under turkey. Reassemble. Cut diagonally, insert toothpicks to hold sandwiches together and ENJOY!
