Simple Creamy Hummus Recipe
My trick here is to cook the garbanzo beans for the recommended high end of cooking time- 2 hour. Don't drain immediately. Let the beans soak in the water for an additional hour (or more). This will make a very creamy and yummy hummus. The consistency reminds me of mashed potatoes.

4 1/2 cups cooked garbanzo beans
1/8 cup lemon juice
1/4 cup oil
Cayenne pepper
1/8 cup diced jalapeƱos
1/2 tsp. cumin
3 garlic cloves
1/4 tsp. salt
Blend until smooth.

Tonight I challenged myself to make a hummus the Mr. would enjoy. With a little roasting knowledge, bell peppers (he Loooooves bell peppers, in everything :-), and black pepper....
....Anything is possible. Right?
Combine above hummus recipe with the following:
Roasted Yellow Pepper. 425 degrees for 12 minutes. |
3 roasted garlic cloves also chopped to a chunky paste
2 dashes green tobacco sauce
1/4 tsp. finely chopped fresh thyme
1 teaspoon salt
1/2 teaspoon cracked black pepper
1/4 teaspoon sugar
Mix on medium for 45 seconds.
Refrigerate for 10 minutes
Serve!
